2011-08-21 Slidders, Fish Tacos, Fish & Chips @ Chez Buddha

Another night for Buddha Boy to play around in his kitchen.  Other than our regular diner, MukMuk-D, I also invited CW to join us.  CW is a piggy-eater like us...except she's not fat...hahahahaha!
Remember those lamb sausage patties we bought weeks ago from VCC Seiffert Market?  Buddha Boy made some Lamb Sliders with caramelized onions and watercress mayo.  The lamb was not gamy at all!  The caramelized onions kinda overpowered the watercress mayo, but overall, it was tasty.  Next time, Buddha Boy wanted to improve this by adding feta and tzatziki.
Buddha Boy made his own "La Brasserie" Style Sliders with roasted chicken in gravy and onion straws.  This was another hit.  The onion straws were extremely crispy and added texture to the sandwiches.  The chicken was extremely tender and flavorful.  What's missing was the dijon.
Okay, Buddha Boy tried to imitate Italian Kitchen To Go by making his version of Mini Portifino with romaine, crab, shrimp and Westphalian ham.  Unfortunately, this was a major fail.  Buddha Boy tried to use up these cans of crab meat MomJ bought from Costco, but yuck, the crab meat was extremely fishy and tasted horrible.  After one bite these all went into the trash.
CW's favorite of the night was the Spam Sliders, made with 60% less sodium Spam (bought from T&T), coleslaw and teriyaki sauce.  This was extremely refreshing.  The tangy coleslaw contrasted the salty Spam.  The teriyaki sauce added a light sweet undertone.  CW requested to have a second plate of this...hahaha!  Yup, she could eat.
After trying out Tacofino's famous fish tacos (see post 2011-08-19 Cart-Hopping @ Downtown), Buddha Boy wanted to make his own Fish Tacos at home.  He deep-fried some beer-battered cod fillets and tossed them in whole wheat flour tortillas (bought from Superstore, PC Blue Menu) then topped with salsa, coleslaw and mayo.  The fish was extremely crispy.  The corn niblets added crunch and sweetness to the salsa.  The coleslaw contrasted the overall "oily" taste of deep-fried fish.  The mayo was not too noticeable.  What's missing was the lime, but other than that, I actually thought Buddha Boy's version tasted better than Tacofino's.
Since Buddha Boy was deep-frying, it made sense to make some fish and chips.  These were Beer-Battered Cod Fillets and Beer-Battered Popcorn Shrimps.  I just love how light this batter was...good job Buddha Boy!!!
We ended our meal with some "chips".  Buddha Boy picked up a pack of frozen Tater Tots, or what Taco Time calls it, "Mexican Fries"...hehehe!
